Fine Dining in The Italian

As with all things Aman in this world it is the allure of luxury that tempts, both in the elegant poolside setting and, naturally, the foodstuffs that find their way onto the end of your knife and fork.

Dinners guest here can load their plates with slices of cured proscuitto, silvers of exquisite salami and a formidable array of fungi, not to mention the requisite tomato and feta salad, a large bowl of mixed olives and an exceptionally tasty doorstop chuck of frittata.

Order the Gamberonni Freshwater Prawns here or contend with a revolving specials board  featuring such gourment offering as a Wild Sumbawan Boar Bolognaise. As the menu rotates on an almost daily basis it’s hard to predict what the chef will have in store for his guests. One thing you can be sure of is the inclusion of the classic Tiramisu on dessert menu. This faultless sweet, with just the sublest hint of Marsala (a nutty espresso flavouring through the biscuit), velvety mascarpone and a heavy coating of cream on the top layer, has given many visiting diners to Amanusa a new culinary addiction to placate.

Fine Dining in Padi

The outdoor pavilions of Padi can be found nestling amongst the lily ponds of The Ritz-Carlton Bali Resort & Spa. Padi is all about authentic Thai cuisine with modern presentation, taking the flavours and influences of southern and northern Tha‎i dishes and bringing them to a five star audience in one of Bali’s premier Asian restaurants.

The menu has recently been revamped by the Tahi chefs at Padi to compliment popular dishes such as Mien Kham (betel leaves topped with prawn, chili, lime, ginger, peanut and thick coconut sauce); the classic Tom Yam Goong; and the chef’s person favorite Gaeng Kiew Waan (green curry with fish balls, Thai pea eggplants, apple eggplant and Thai basil served with steamed rice noodles). The Pad Thai Noodles, Green Chicken Curry and Lobster Spring Rolls are constantly in demand at Padi as are the traditional dessert offerings including the Sliced Mango with Thai Sticky Rice. Padi is reserved as a dinner affair but can be booked for daytime events, function and parties. A great introduction to the culinary Kingdom of Thailand in very special Balinese surroundings.
